  1. All Purpose Flour 1 cup
  2. Wheat Flour 1 cup
  3. Baking Powder ½ tsp
  4. Sugar ½ cup
  5. Brown Sugar ½ cup
  6. Grounded Nutmeg A pinch
  7. Grounded Cardamom A pinch
  8. Grounded Cinnamon A pinch
  9. Butter 2 tbsp
  10. Canola Oil 2 tbsp
  11. Grated Beetroot 4 tbsp
  12. Milk 4 tbsp
  13. Vanilla Extract ½ tsp
  1. In a bowl sift flours along with baking powder at least twice or more.
  2. In another bowl cream butter and sugar. To this add in oil and brown sugar. Whisk by adding grated beetroot. Now add spices and essence. Combine well.
  3. Gently fold in flour mixture. If the dough looks dry add little milk. Knead until you get smooth and soft dough. Wrap with plastic cling and refrigerate for 1 hour.
  4. Roll out the dough into ¼ inch thick round and using a cookie cutter cut into desired shape.
  5. Place them in the baking tray with 1 cm gap in-between. Leave the tray in fridge for 5 minutes to firm up the cookies.
  6. Bake for 20 minutes or until brown and crisp on edges in a pre-heated oven at 220C.
