Ingredients
  1. 2 Carrots, peeled and coarsely grated
  2. 2 Celery stalks, finely chopped
  3. 1 Red pepper, finely sliced with seeds removed
  4. 2 Spring onions, sliced
  5. ½ cup Fresh Coriander
  6. ½ cup Cashew nuts, roasted
  7. 150 g Crispy Noodles
  8. 2 Tbsp Soy Sauce
  9. 3 Tbsp Sweet Chilli Sauce
  10. 2 Limes, juice
Steps
  1. Combine salad ingredients in a large bowl. Place dressing ingredients in a small bowl and stir to combine.
  2. Pour dressing over salad and toss well. This salad is best served immediately after tossing, so the noodles don't become soggy.
