Ingredients
  1. 2 cups finely chopped fenugreek leaves
  2. 1 cup Sliced Mushrooms
  3. 1 cup Brown Rice
  4. 2 tsp Oil
  5. 2 tsp Finely Chopped Green Chillies
  6. 1 tsp Finely Chopped Ginger
  7. 1 tbsp Finely Chopped Garlic
  8. 1 cup Finely Chopped Onions
  9. 1/2 cup Finely Chopped Tomatoes
  10. 1/2 cup Brinjal
  11. 1/2 cup Surti Papdi Seed
  12. 1/2 tsp Chilli Powder
  13. Salt to taSTE
  14. 2 tbsp Finely Chopped Coriander

Steps
  1. Heat the oil in a pressure cooker, add the green chillies, ginger, garlic, and onions and sauté on a medium flame for 2 minutes.
  2. Add the fenugreek leaves, mushrooms, tomatoes, brinjals, surti papadi seeds,and chilli powder, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  3. Add the brown rice, 2¼ cups of hot water and salt, mix well and pressure cook for 4 whistles.
  4. Allow the steam to escape before opening the lid.
  5. Serve hot garnished with coriander.
