Ingredients
  1. 1/4 Small Cabbage Chopped
  2. 1 Medium Carrot Shredded
  3. 2 Button Mushrooms
  4. 1 Small Green Capsicum
  5. 1 Spring Onion
  6. Oil 2 tablespoons
  7. Ginger As Per Taste
  8. 3 Cloves Garlic Chopped
  9. 2 Inches Bamboo Shoots
  10. Green Chillies 2
  11. 2 teaspoon Red Chilli Sauce
  12. 2 tablespoons Soy Sauce
  13. Tofu 50 grams
  14. 3 tablespoons Cornflour
  15. Salt to taste
  16. Noodles Deep Fried 1 cup
  17. 4 cups Vegetable Stock
  18. 1/4 cup Water
  19. Noodles deep fried 1 cup
Steps
  1. Slice spring onion. Heat oil in a non stick wok.
  2. Add spring onions to the oil in the wok along with ginger and garlic and toss.
  3. Slice button mushrooms.
  4. Add carrot, cabbage and mushrooms. Chop Chinese mushrooms roughly and add to the wok.
  5. Chop bamboo shoot into small pieces. Add 3 cups stock and green chillies to the wok. Add red chilli sauce and soy sauce and mix.
  6. Cut tofu into ½ inch cubes and add to the soup. Mix cornflour with ¼ cup water and add to the soup and cook till it thickens.
  7. Add salt and mix.Chop capsicum, reserve some for garnish and add the rest to the soup and mix well.
  8. Serve the soup hot garnished with crisp noodles and capsicum.
