Ingredients
  1. Olive Oil As Needed
  2. 1/2 cup Of Onion slices
  3. 1 teaspoon Of Ginger Paste
  4. 1 teaspoon Of Garlic Paste
  5. Salt As Needed
  6. 1 teaspoon Of Onion Paste
  7. 1/2 teaspoon Of Turmeric Powder
  8. 1/2 teaspoon Of Red Chili Powder
  9. 1/2 teaspoon Of Coriander Powder
  10. 1 cup Of Cubed Cauliflower
  11. 1 cup Of Cubed Carrot
  12. 1 cup Of Cubed Potatoes
  13. 1 cup Of Cubed Capsicum
  14. 1/2 cup Of Cubed Yardlong Beans
  15. 7-8 green chilies, sliced in half along the length
Steps
  1. Heat a saucepan with the olive oil. Fry the onion slices with the ginger, garlic and onion pastes, salt, turmeric, red chili and coriander powders.
  2. Add the cubed vegetables and green chilies.
  3. Pour in 1/2 cup of water and cook with lid on for 30 minutes.
  4. Check if the vegetables have softened. If not, then cook for another 5-10 minutes.
  5. Stir and garnish with fresh coriander leaves.
  6. Serve.
