Ingredients
  1. 1 1/2 tbsp Oil
  2. 1/4 cup Finely Chopped Onions
  3. 1/2 tsp garlic paste
  4. 1/4 cup Cabbage
  5. 1/4 Cauliflower
  6. 1/4 Carrot
  7. 1/4 cup boiled , peeled and mashed potatoes
  8. 1/2 tsp Chilli Powder
  9. 1/2 tsp Lemon Juice
  10. 2 tbsp Finely Chopped Coriander
  11. Salt to taste
  12. 4 Whole Wheat Bread slices
  13. 4 tsp Butter For Spreading
  14. 4 tbsp Grated Processed Cheese
  15. Tomato Ketchup to taste
Steps
  1. Heat the oil in a broad non-stick pan, add the onions and garlic paste and sauté on a medium flame for 1 minute.
  2. Add the mixed vegetables and sauté on a medium flame for 2 minutes.
  3. Add the potatoes, chilli powder, lemon juice, coriander and salt, mix well and cook on a medium flame for 1 minute. Keep aside.
  4. Divide the topping into 4 equal portions and keep aside.
  5. Spread a little butter on all the 4 bread slices and place them on a clean, dry surface with the buttered side facing upwards.
  6. Spread a portion of the topping and 1 tbsp of cheese on each buttered bread slice and bake in a pre-heated oven at 200°c (400°f) for 15 minutes.
  7. Serve immediately with tomato ketchup.
