Ingredients
  1. 2 tablespoons Ground Almonds
  2. 50g Toasted Breadcrumbs
  3. 5 Cloves Garlic
  4. Sea Salt to taste
  5. 2 tablespoons Olive Oil
  6. 1 tablespoon White Wine Vinegar
  7. 450ml Water
  8. 6 cubes Ice
  9. 500g seedless green grapes, peeled
Steps
  1. Pound almonds, breadcrumbs, garlic and salt together in a mortar to form a paste. Gradually mix in oil. Stir in vinegar. Place mixture in a bowl/tureen. Stir in water, ice and grapes. Let rest in a cool place 30 minutes before serving.
  2. Note: Use a medium orange melon instead of grapes, sliced into bite sized pieces.
